Torteau de Chèvre

First of all: I KNOW! How pretty was that wedding? I got up at 3:45 a.m. and watched the Canadian CTV feed straight through until 10 a.m., took a brief pause and then switched over to TLC and watched it all over again. I’m not even kidding ya. My favourite parts were the lip-reading when Harry whispered to William “Wait ’til you see her!” at the altar, and then once Kate had settled herself into the carriage after the ceremony, she turned to William and did exactly what I would have done: she said, “Are you happy?!” just to convey how crazy-happy she was. SIGH. Magic! Of course, I also would have smooched him huge in the carriage, but that’s just more proof that I am not Royal.

So in lieu of wedding cake, we got torteau de chèvre – goat cheesecake. Or is it ‘goat cheese cake’? Whatever, it was YUM. And so easy to put together, even with the folding in of the egg whites, which I always think I over-mix, and I don’t think mine poofed quite as much as Dorie’s picture, so it’s possible I did it this time, too. My mother-in-law was staying with us for a few days of big city shopping, so I made the cake while she was here in lieu of us traveling out to London this weekend for Mother’s Day. She loved it! It was a great treat after a long, cold and rainy day of shopping, as well.

I really loved the velvety texture and you could definitely tell it had the goat cheese tang to it, in opposition to a regular cream cheesecake. I bought some fresh strawberries & blackberries from a green grocer and topped it with those the first night, but it was also lovely on its own or with some maple syrup – but what ISN’T good with maple syrup, really?

    So happy to vote for your lovely photos ( I even managed to do it correctly :) since I enjoy them each week that you post. Your tourteau turned out beautifully. Nana and I made ours together this week- we feared eating entire cakes ourselves otherwise…and enjoyed the results. Also love loved your comments about the wedding. I got up at 5 am to watch it and watched replays all weekend. My kids were getting worried…..

    Great photos! I loved the texture of the batter, unbaked and baked. I described it as custardy, but I think your “velvety” nails it better.
