Spiced Butter-Glazed Carrots

I hope everyone had a lovely Christmas holiday!

Jon and I went to his parents’ house and celebrated with his family, which was great fun and very low-key. We played with the nephews, watched movies with his siblings and had a generally great visit! My mother-in-law was so happy that I’d brought all my baking – she hadn’t had time to make any, so that worked out very well. I had made an additional batch of Speculoos since I was almost out of them, and another batch of fudge the day before we left, so there was a little of everything. She was more than happy to hang on to the remainders so I didn’t have to bring them home, which was good ‘cuz we’re the only ones to eat it here and when I say ‘we’, I really mean me.

So in recovery from all of Christmas’s indulgences, last night’s dinner was more simple fare – seasoned baked chicken breasts, crunchy raw green veggies and Dorie’s Spiced Butter-Glazed Carrots.

Macarons & Cookie Boxes

The supply of Christmas cookies in my freezer is dwindling, and not because I’ve been giving a lot away. Which is why I finally packed up a bunch into charming boxes, before I no longer fit into my new jeans.

I wrote a few weeks ago about my first attempts at macarons which turned out well for the most part, although I knew I could do better. My second attempt at them, however, was equally as varied. This time, the cookies turned out very well, but for some reason my caramel-making skills have disappeared. Strange, non? Which is why I couldn’t write about them last week because we were fighting after two batches of burnt caramel.

Birthday Cake

December 14th was my birthday – #35, whoo hoo! – and since I’m the unemployed resident cook/baker, I had both the time and the inclination to make myself a very special birthday cake. Michel Rostang’s Double Chocolate Mousse Cake, to be exact. And – stop me if you’ve heard this before – it was DELICIOUS. No foolin’.

Essentially it’s chocolate mousse baked into a mold. Dorie offers 3 versions: the first layer of baked mousse is then cooled, more mousse added, chilled and then served (this is what I did), or you can bake it again once the second layer is added and serve it warm, or you can serve this version chilled, as well. Whatever you do, I highly recommend a cloud of barely-sweetened whipped cream on top.

Speculoos & Sweet and Spicy Nuts

I am such a keener. Actually, I’m not usually – I’m pretty much the laziest procrastinator anyone’s ever met, I’m sure – but last week was my self-appointed Christmas baking week, and these two recipes fit so nicely into my list, that I made them both. In the same day. Along with another batch of chocolate-caramel macarons (I’m not going to write about those right now – we’re fighting).

Cookie-Press Shortbread

A few years ago, I decided I needed a cookie press. I bought the least expensive one I could find (I think it was $6) at my favourite kitchen store in Calgary, The Compleat Cook, and managed to break it the first time out, so back to the store I went and bought the next-least expensive one. And then last Christmas, my mom bought me a new one which I didn’t get to use until this cookie-making season. This one is by far the best one though, and my cookies turned out great! It came with a lot of shapes that I’d never had before – snowman, wreath, candy cane, butterfly, dinosaur (it kinda looks like a camel to me), bat, pumpkin – along with the tree, flowers, star and heart, so one could use it year round! Cool! I stuck to the Christmas-themed ones this time, but I think some pumpkin flavoured pumpkins next fall will be sweet, as well.

Go-To Beef Daube

There are almost no words to how fantastic this was. For real. I’m a slow eater and can be even slower ‘cuz I tend to talk a lot when we have company, which we did – my brother-in-law was in town for the evening – but I was the first one to finish the night I served this, pretty much foregoing breathing. It was, simply, divine.

I was a smidgen apprehensive at the amount of onions in it: six shallots & an entire Spanish onion! (And what is it with my shallots lately? The ones I got from the grocery store the last few weeks are huge and they’re so strong! Shallots never used to make me cry, but chopping up 6 just about swore me off of them forever!)

Almond Biscotti & Gingerbread Biscotti

The first time I made biscotti was from a recipe my cousin gave me at my Pampered Bride shower before I got married. Store-bought biscotti* doesn’t hold a candle to homemade in my opinion and once I made it for other people (mainly our friends & coworkers in Calgary), the clamoring for more never really ceased.

My Mom’s Fudge

My mom has a really great fudge recipe. She’s perfected it for years and gives away huge amounts to friends, coworkers & family at Christmas. It is the quintessential fudge recipe to me – smooth and creamy, not too sugary, rich chocolate flavour and dotted with nuts.

Leek and Potato Soup

Wow! Great responses to my Potato Gratin post – thanks so much to all my new FFwD friends for their lovely comments about my photos and general encouragement! As I mentioned last week, we went away for the weekend and ended up at a party until 3 a.m. (I’m long passed my days when I could recover from that easily) and seem to have compromised my immune system again – I’ve been battling a terrible cold all week! So I’ve been meaning to visit all your sites and leave some comment love, but I’ve honestly been vegging on the couch in front of the TV or else in bed this week.

But I always crave soup more than anything when I’m sick. I even made chicken noodle soup from scratch the other night, which would have made another great post, but I was too lethargic to haul out my camera. Anyway, I decided to try to kick this cold with some Leek & Potato action as well!
